Mexican Cornbread

So, you know the drill grab your life-sized gaylord poster & apron and be prepared to be wow’d!
1 1/2 cups yellow corn meal(war eagle has a great yellow corn meal)
3 tsp baking powder
2 eggs beaten
1 tsp salt
2/3 cup oil
1 can diced green chilis drained(i also cut up a few jarred japaleno peppers-cuz I like it spicey-optional of course)
1 can whole kernal corn drained
1 cup sour cream
1 cup sharp cheddar grated(I like cheese so I typically do an extra 1/2 cup)
parika-to coat the top
pre heat oven to 350
Mix with a spoon corn meal,baking powder,salt, add eggs and oil mixing well,add in peppers,corn and sour cream. pour 1/2 mixture into a sprayed-(like pam) cornbread dish(what is that 8×8?)sprinkle half of the cheese on the batter then pour remaining batter/mixture on top of cheese and sprinkle remaining cheese,take your parika and sprinkle on the top of whole connoction and bake for 40 mins-This lil spicey cornbread goes great with beans and fried tators or 15 bean soup or just by itself shared with that someone special-like that gaylord poster!
